If you want to downgrade iPhone to use third party software, you may take a look at this guide

Steve Jobs announced that Apple will open the iPhone and iPod Touch SDK to third party software in the next year. Is it possible that Aimersoft will develop a video player that can be installed on iPhone directly? So you will not need to convert the video.
